Chef Fernando was born and raised in Miami, FL. At the age of 18 he realized that he would spend the rest of his life cooking, which soon led him to St. Helena, California to attend the world renowned Culinary Institute of America.
His professional culinary career began in Los Angeles at Lucques under the guidance of Chef Suzanne Goin. From there, Fernando went to Austin, TX where he spent two years mastering fine dining Philipino food at Qui Restaurant. After working every station from pastry to grill, he was hired as a Research and Development Chef for Counter 3.FIVE.VII.
His love for fine dining then led him to San Francisco to join the COI Restaurant team in their quest for 3 Michelin stars. They were awarded the prestigious honor the following year.
Chef Fernando’s food is an expression of his culinary journey and collected skills over the years. His menus reflect the importance of using a product in its entirety and leaving nothing to waste. To him, being a great chef means treating his ingredients with the upmost respect, and providing his guests with a truly thoughtful dining experience.
